Strawberry Galette Recipe
Andrew and I recently drove up to Carlsbad Strawberry Company and picked buckets full of strawberries. I was excited to put the fruit to good use - smoothies, oatmeal toppings, baking - and my mom suggested I try making a galette.
A galette is a flat, rounded cake of pastry or bread, usually with the edges folded and with fruity mixture exposed in the middle. It seemed like the perfect new treat to make!
Pie crust
2 tablespoons sugar
1 tablespoon cornstarch
1 egg, beaten
2-3 cups cut strawberries
Preheat oven to 425 degrees.
Unroll pie crust onto parchment paper on baking sheet.
Gently mix together fruit, 1 tablespoon sugar, and cornstarch.
Pour mixture into center of the pie crust. Leave roughly two inches between the mixture and the edge of the crust.
Fold up the border of the crust and gently pinch into pleats. Brush the beaten egg onto the folded crust and sprinkle with 1 tablespoon of sugar.
Bake 12-15 minutes or until crust is lightly browned. Serve warm or at room temperature!
Top your galette with a scoop of ice cream or a dollop of whip cream for some extra sweetness!
