Autumn Desserts

One of the best parts about autumn are all of the delicious treats to be made! While I am not the best cook, I will toot my own horn when it comes to my baking skills. Desserts have always been more of my forte, so I thought that I would put together some autumn-based recipes that will be perfect for any get-together, or simply for yourself!

 

Here are a few of my favorite recipes of treats and desserts to make for the fall season. Enjoy!

Pumpkin Snickerdoodle Cookies

1 cup of butter

1 cup granulated white sugar

1/2 cup light brown sugar

3/4 cup pumpkin puree

1 egg

2 teaspoon vanilla extract

3 3/4 cup all-purpose flour

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup granulated white sugar (for cinnamon sugar mixture)

1 teaspoon ground cinnamon (for cinnamon sugar mixture)

1 teaspoon pumpkin pie spice (for cinnamon sugar mixture)

 

1. Cream butter until fluffy.  Add sugars and puree and beat well. Add egg and vanilla to mixture until completely mixed in.

2. Whisk flour, baking powder, salt, and ground cinnamon together. Slowly add dry ingredients to wet ingredients.

3. Cover dough with plastic wrap and chill for an hour.

4. Preheat oven to 350, then take out dough. Mix cinnamon sugar ingredients together. Line baking sheet with parchment paper.

5. Roll dough into balls and coat with cinnamon sugar mixture. Place on baking sheet.

6. Bake for 12-14 minutes. Let cool for 5 minutes.

Apple Pie Slices

1/4 cup packed light brown sugar

3 tablespoons melted butter

1/3 cup chopped pecans

1/3 cup chopped almonds

1/3 cup chopped walnuts

1 Granny Smith apple

1 can Pillsbury crescent rolls

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon allspice

 

1. Preheat oven to 350 and line baking sheet with parchment paper.

2. Combine ground cinnamon, nutmeg, and allspice. Add brown sugar and set aside.

3. Take melted butter and toss in apple slices. Set aside.

4. Arrange crescent roll triangles and evenly distribute brown sugar mixture onto each triangle.

5. Sprinkle nuts evenly onto each triangle.

6. Place apple slice onto wide end of triangle and wrap dough around each apple.

7. Brush remaining butter onto each roll and sprinkle remaining spices evenly over top of crescent roll.

8. Bake for 12-15 minutes or until golden brown. Cool for 5 minutes before serving.

Apple Crisp

4-5 Granny Smith apples

1 cup of flour (for crumble)

1 cup packed brown sugar

1/4 teaspoon baking soda

1/4 teaspoon baking powder

1/2 cup melted butter

1 cup white sugar

1 tablespoon all-purpose flour

1 teaspoon ground cinnamon

1/2 cup water

1 cup quick-cooking oats

 

1. Preheat oven to 350.

2. Combine oats, 1 cup of flour, brown sugar, baking powder, baking soda, and melted butter together. Set aside. 

3. Peel apples then cut apples into cubes and place apples in 9x13 pan.

4. Mix sugar, 1 tablespoon flour, and ground cinnamon together.

5. Sprinkle over apples then pour water evenly over all. 

6. Sprinkle oats mixture over apples evenly.

7. Bake at 350 for 45 minutes.

1. This one is as simple as it gets. Mix together all of the ingredients into a bowl and enjoy!
