Peach Cobbler Recipe

Happy first day of summer! Like with every change of the season, I look at it as an opportunity to try out and enjoy new recipes. For summer, I thought I’d start with incorporating a fruit I don’t normally use with desserts - peaches!

When I think of peach cobbler, I think of summer barbecues and bonfires. It’s a fresh, warm dessert that invokes fun times and gatherings, especially when paired with a refreshing scoop of ice cream. So I thought I’d give it a go, and I’m so happy with how it turned out!

Peach Cobbler

  • 5-6 peaches, sliced

  • 1/4 cup sugar

  • 1/2 tablespoon cornstarch

  • 1 cup flour

  • 1/2 cup butter, cold and cubed

  • 1/4 cup sugar

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  1. Preheat oven to 375 degrees.

  2. In a large bowl, combine sliced peaches and 1/4 cup sugar and stir with a spatula. Let sit for 20 minutes, then add cornstarch and mix well.

  3. In a separate bowl, combine flour, butter, sugar, milk, vanilla extract, baking powder, cinnamon, and salt. Using your hands, gently incorporate the butter and rub together until the mixture becomes course, like bread crumbs.

  4. In an 8x8 or 9x9 pan, spread the peach mixture evenly. Spread the crumb topping over the top, covering evenly.

  5. Bake for 40 minutes or until the top is golden brown and bubbly.

  6. If you want, enjoy it with a scoop of vanilla ice cream!
