Gluten-Free Banana Chocolate Chip Loaf Squares Recipe

Last month, Andrew and I took a weekend getaway to Long Beach on the Washington coast. While we were there, we bought a bunch of books from the cutest little bookstore. One of them was a book of gluten-free dessert recipes. Since then, I’ve been waiting to crack into it and make some yummy treats!

I decided to start with something I knew I would definitely like: banana chocolate chip bars. But it didn’t turn out quite like the recipe in the book. Instead of a rectangular ban, I opted for a square 9x9 pan. What was supposed to be bars turned into loaf squares. Slightly taller, definitely fluffier. This little mistake actually ended up working out! These loaf squares are like the perfect bite-size banana bread pieces, with the sweet taste of chocolate mixed in.

  • 1/4 cup vegetable oil

  • 1/4 cup oat milk

  • 2/3 cup sugar

  • 1 tablespoon vanilla extract

  • 3 bananas

  • 1 1/2 cups gluten-free flour

  • 1/2 cup tapioca flour

  • 2 teaspoons baking powder

  • 1 cup vegan chocolate chips

  1. Preheat oven to 350 degrees.

  2. Mix together oil, milk, sugar, vanilla, and bananas till smooth.

  3. Add in the flours and baking powder. Stir in the chocolate chips.

  4. Pour batter into a greased 9x9 pan.

  5. Bake for 30 minutes or until edges are golden. Let cool in the pan then cut into squares.
