Mini Apple Pies Recipe

Growing up, I was never much of a pie person. I definitely gravitated more towards cookies and cakes, but never really pie. In adulthood, I started to branch out and try desserts I never did before. As my love of baking has grown, I have also started branching out and trying recipes I would never have before.

On Pinterest, I have seen plenty of miniature dessert recipes, so I wanted to take a crack at it. In time for Thanksgiving, I thought I would try my hand at mini apple pies, and not only am I super happy with how they turned out, but I’m also thrilled to share that recipe with you!

Mini Apple Pies

  • 2 pie crusts, room temperature

  • Half of a Granny Smith apple, finely diced

  • 1/4 cup sugar

  • 2 tablespoons flour

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • Pinch of ground cinnamon and sugar, combined

Glaze - optional

  • 1/2 tablespoon butter

  • 3 tablespoons confection sugar

  • 1/2 tablespoon milk

  • 1/8 teaspoon vanilla

  1. Preheat oven to 425 degrees.

  2. Unroll the crust and, using a cookie cutter or cup, cut out circles from the dough.

  3. In a bowl, combine apple, sugar, flour, ground cinnamon, and vanilla extract.

  4. Place apple mixture on one half of each dough circle. Fold the dough over the mixture, sealing it in, and pinch the ends closed using your fingers or a fork.

  5. Line a baking sheet with parchment paper and place bites on. Cut three small lines on each one, then sprinkle lightly with a little cinnamon sugar.

  6. Bake for 20 minutes or until crust is lightly golden. Remove from the oven and let cool.

  7. Optional - To make the glaze, melt the butter in a pan, then whisk in sugar, milk, and vanilla. Drizzle over the apple pie bites. Enjoy!

Store any leftover pies in a sealed container. Simply pop in the microwave for 10 seconds to warm back up.
