Lemon Sugar Cookies Recipe

Summer is finally here! While I do tend to find myself gravitating towards autumnal bakes and recipes, I decided to branch out with flavors I don’t normally use. So, to celebrate a new season, I wanted to try out a new summertime lemon sugar cookie recipe that’s perfect for sunny days!

Lemon Sugar Cookies

  • 2 3/4 cups flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup butter softened

  • 2 ounces cream cheese softened

  • 1 1/2 cups sugar

  • 1 1/2 teaspoon vanilla

  • 1 lemon

  • 2 tablespoons lemon juice

  • Lemon zest

  • 1 egg

  • 1/4 cup sugar for rolling

  1. Whisk together flour, baking soda, baking powder, and salt in a medium bowl.

  2. Beat butter, cream cheese, and sugar in a large bowl until smooth.

  3. Mix in vanilla, lemon juice, and lemon zest.

  4. Beat in egg.

  5. Slowly add flour mixture to the large bowl until combined.

  6. Wrap with plastic wrap and refrigerate for 1 hour.

  7. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

  8. Scoop dough into balls, then roll in 1/4 cup sugar until coated.

  9. Bake cookies for 10 minutes, or until edges are slightly brown.

  10. Let cool for 5 minutes then remove.
