Autumn Dessert Recipes

Earlier this week, I shared a blog post about Friendsgiving and gave a little recipe for apple crisp bites (they’re so good and it’s really hard for me to not eat six in one sitting). I thought I’d keep on with the recipe train and do a couple more autumnal desserts! Since Thanksgiving is tomorrow, I wanted to share a couple treats that are quick and easy and will be the perfect dessert to a hearty meal.

Peanut Butter Pecan Cookies

  • 1 cup peanut butter

  • 1 egg

  • 1 cup white sugar

  • Pecans

  1. Preheat oven to 350 degrees and line cookie sheet with parchment paper.

  2. Mix together peanut butter, egg, and white sugar.

  3. Make small balls out of the dough and make light cross marks with a fork.

  4. Bake cookies at 350 degrees for 10-12 minutes. The moment the cookies come out of the oven, gently press a pecan onto the top of the cookies.

Cinnamon Sugar Pumpkin Bread

  • 1 1/4 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1 tablespoon pumpkin pie spice

  • 1/4 teaspoon salt

  • 3/4 cup granulated sugar

  • 1/4 cup light brown sugar packed

  • 3/4 cup pumpkin puree

  • 1/3 cup vegetable oil

  • 1/4 cup milk

  • 2 tablespoons molasses

  • 2 teaspoons vanilla extract

  • 2 tablespoons granulated sugar

  • 1 teaspoons cinnamon

  1. Preheat oven to 400 degrees. Spray pan with cooking spray then flour the sides and bottom of the pan.

  2. Whisk together flour, baking powder, pumpkin pie spice, and salt. Set aside

  3. Add together sugars, pumpkin puree, oil, milk, molasses, vanilla and whisk. Set aside.

  4. Pour wet mixture over the dry ingredients and stir until combined, but not overmixed.

  5. Fill pan with mixture about 2/3 full.

  6. Sprinkle 2 tablespoons of sugar and cinnamon over the mixture.

  7. Bake for 30-40 minutes or until a toothpick can be inserted and come out clean.

  8. Allow to cool for 10-15 minutes before removing from pan.
